Gooooood afternoon or evening, my friends!
Since we've had an impressive amount of time staying home (only leaving for the occasional grocery store run for produce, walks with the dog, and doctor visits) I figured I'd give you a fun window into what the hell we're eating! But first, an update on life.
If you'd like to skip to the recipes, feel free. It'll be below the next section.
Life update
We've made it twelve days in quarantine at my house and... yeah, you could say I'm going crazy. Painting my toes feels like a massive feat, I've put on jeans maybe two times, and the pets are going crazy.
The times we have been able to get out are a blessing, even if my anxiety is through the roof and I'm constantly reminding Jake not to touch his face.
On Monday, we went to the doctor for our 37-week check!! Holy. shit. my dudes... we're at 37-weeks. She could literally come at any time! I'll be real, it's almost all I can think about. Every single cramp I feel sends my mind in a spiral lol.
Is this it?!
Is it time?!!
My doctor (and every other woman who's been pregnant) always has this to say: "oh... YOU'LL know."
We did our exam and I'm officially 0% dilated. So no, it wasn't and isn't time. But I'm just getting so excited. I cannot wait to see what she looks like and be able to bring home a baby that's freaking mine. We got to see her Lil skeleton face on the ultrasound monitor and watch her tiny chest practice breathing.
I cannot believe my body made her. What a wild experience this has all been.
Overall my short time with social media distancing has been a big help. I'll admit I've had a hard time breaking the habit of picking up my phone to check my notifications. It truly has just become a habit! I'm working on it.
If you're experiencing a lot of anxiety lately? Maybe try to see if those feelings mostly happen after you've been on social media. If yes, I'd encourage you to give yourself a break for a few days. I bet it'll help.
Okay, thanks for checking in! On to the post.
This is a vegan household, y'all, so the majority of these recipes are made for vegans – but don't let that deter you! We, vegans, know how to make and eat delicious meals so these recipes are killer. If you're a carnivore, just add whatever you'd like! It's that simple.
(There also may be some recipes that aren't vegan - I've adjusted those for my crew.)
Below is a list of eight, linked recipes we've thoroughly enjoyed while being home. Let's go!
4. Vegan gyros
6. Vegan chili
7. Chicago dogs
